Light flour type 630 made from the original spelt varieties Ostro and Oberkulmer, which have never been crossed with modern wheat varieties. It can be used like light wheat flour and is suitable for cakes, biscuits, shortcrust pastry, crêpes, yeast pastry, Guetsli or white bread. Milled at the Kofmel mill in Deitingen. The Kofmel family is the third generation to run the family business. They source the grain from farmers in the region with whom they have a long-lasting working relationship.

Storage & shelf life
Store the flour in a tightly closed container to protect it from moisture and pests. It will keep for 12 to 18 months in a dark and cool place.
