Fonio is an ancient staple food. In botanical terms, it is a type of finger millet. We purchase our fonio from the West African processing plant Bodhi Foods in the city of Niamtougou in northeastern Togo. Bodhi Foods works with over 800 family farmers in the Doufelgou region. Each family farms an average of 0.8 hectares of land.
Use & preparation
Fonio is surprisingly versatile and is suitable for preparing both sweet and savoury dishes, from crêpes to porridge or an original pizza. Discover all our recipes on the blog.
Basic recipe:
Add the fonio to two to three times the amount of boiling water, stirring constantly. Simmer the grains over medium heat and keep stirring for 5 minutes. Then turn off the heat and let the fonio steam for 10 minutes.

Storage & shelf life
Transfer the fonio to a tightly sealed container to guard against moisture and pests. It will keep for at least two years from the date of production when stored in a cool, dry place.
