These apricots grow wild in the region around Samarkand. Harvested by Uzbek family farmers, they are pitted by hand, halved, and gently sun-dried.
Because they are not steamed, the organic fruits have a firm texture. Their flavor is intense, with natural honey-like sweetness and a hint of tartness.
The apricots are neither sugared nor sulphured, which is why they have a naturally pale color rather than a bright orange hue.

Storage & shelf life
Dried fruit can be stored at room temperature well past the best-before date in a tightly sealed container away from light. They only become slightly harder after a few months. Before using them for baking or cooking, you can soften fruit that has hardened by placing it in some hot water for a few minutes.
