Shelled wild walnut halves harvested near the village of Arslanbob in the Kyrgyz highlands. Around 800 families gather the nuts from the woodland - the largest natural walnut forest in the world. The nuts have an aromatic, tart flavour with a hint of sweetness and a creamy finish.

Storage & shelf life
Store nuts and seeds in a cool, dark place in a tightly closed container. Make sure that the container is as airtight as possible so that moisture is kept away from the nuts. You can also freeze nuts and seeds, which will extend their shelf life by several months.

Farming is not only my work, but also my hobby.
"I have been selling wild organic walnuts to customers from all over the world for years," explains Toktosinov Adhamzhom. The picker lives with his wife and three children in Arslanbob, a popular tourist destination in Kyrgyzstan. The wild walnut trade is very unstable. "We have almost no influence over the size of the harvest," says Adhamzhom. This is why he's planning on growing additional fruit, such as apples, and taking up livestock farming in the future. "But I'll never stop harvesting walnuts."
