This spaghetti pasta comes from the Italian cooperative Libera Terra. The pasta is made in "al bronzo", which means that it is pressed through a bronze mould. This gives it a rough surface and a dense structure. This type of pasta lends itself perfectly to "al dente" cooking and sauces adhere to it better.

What's left after the Mafia has gone?
Libera Terra Mediterraneo is a cooperative that brings together a dozen smaller cooperatives in Sicily, Calabria, Campania and Apulia. All members of the cooperatives produce grain for pasta along with pulses. In Sicily, they also grow tomatoes. Libera Terra's mission is to create self-sufficient, long-term cooperatives in areas that once belonged to the Mafia. They produce high-quality food in harmony with the environment and people. The aim is to create a sustainable economic system based on legal compliance and social justice.
