Organic white asparagus from the Bavarian towns of Kelheim and Abensberg. The asparagus can differ in thickness and be slightly curved – this does not affect its taste. Delivery may be delayed by one day if necessary.

Use & preparation
- Peel the asparagus and cook in boiling water. For 1 kg of asparagus add 2 tablespoons of salt, 1 tablespoon of butter or olive oil and a pinch of sugar to the water. You can also add an optional slice of lemon. Cook for 8-10 minutes, depending on the thickness, then drain and serve with browned butter or Hollandaise sauce and potatoes.
- Can also be used to make a light, creamy soup.
Storage & shelf life
As soon as you receive your fresh asparagus, dip it in ice-cold water, wrap the stalks in a damp cloth and place in the refrigerator. The asparagus will stay fresh for 3 to 4 days under these conditions. To freeze, peel the asparagus and submerge it briefly in ice-cold water. Place the peeled, raw asparagus in a freezer bag and then freeze. They will keep for about 6 months. Do not defrost frozen asparagus, but instead put it straight into boiling water.

In Germany, we always buy and eat as cheaply as possible. There's a lot of talk but no action.
"The most difficult thing in organic farming is having to sacrifice yields and money," says Beate Mayer. "Asparagus farms are a long-standing tradition here. They are very big and have always employed foreign workers from Eastern Europe. Converting a large farm to organic production is a challenge. For that, you need support from major distributors. But they crunch the numbers and see that their customers don't want to pay more. That's why no one switches to organic."
