                        The fusilli rustici is supplied by the Libera Terra cooperative in Italy. The cooperative cultivates the wheat used to produce the fusilli in Sicily, Calabria, Apulia and Campania on land that once belonged to the Mafia and was later seized by Italian authorities. The fusilli rustici is trafilata al bronzo, which means that the pasta is extruded through a bronze die, resulting in a pasta with a dense structure and a more porous texture. Bronze-cut pasta has a perfect al-dente consistency when cooked and is great for absorbing sauces.

Libera Terra Mediterraneo is a cooperative that brings together a dozen smaller cooperatives in Sicily, Calabria, Campania and Apulia. All members of the cooperatives produce grain for pasta along with pulses. In Sicily, they also grow tomatoes. Libera Terra's mission is to create self-sufficient, long-term cooperatives in areas that once belonged to the Mafia. They produce high-quality food in harmony with the environment and people. The aim is to create a sustainable economic system based on legal compliance and social justice.
