The fusilli rustici is supplied by the Libera Terra cooperative in Sicily. The cooperative cultivates the wheat used to produce the fusilli in Sicily, Calabria, Apulia and Campania on land that once belonged to the Mafia and was later seized by Italian authorities. The fusilli rustici is trafilata al bronzo, which means that the pasta is extruded through a bronze die, resulting in a pasta with a dense structure and a more porous texture. Bronze-cut pasta has a perfect al-dente consistency when cooked and is great for absorbing sauces.
