At 4,000 metres above sea level in the Bolivian Andes, there is a fertile plateau where family farmers cultivate quinoa. The taste of the red grains is reminiscent of nuts, but they remain firm to the bite once cooked. Quinoa is gluten free.
Use & preparation
Basic recipe: Cook 100 g of quinoa per person in twice the amount of water or broth for 15 minutes.
