Fresh artichokes of the Agkinara Irion variety. This variety produces cylindrical flower heads that are open at the top. The outer petals have no or sometimes only small thorns.
The flesh of the artichoke heads tastes harmonious, has a slight sweetness and is more tender than our artichokes from Brittany.

Use & preparation
- Wash the artichoke just before preparing it.
- Do not cut the stem with a knife, but break it off. This way you can remove long filaments directly with it.
- Cut off the top third of the artichoke. Rub with a slice of lemon and then boil or steam for around 30 minutes until the leaves can be easily pulled off. Cooking time may vary depending on the size of the artichoke.
- Use the artichokes to make a casserole. Artichoke hearts can also be used to make spreads and dips.
Storage & shelf life
Artichokes are best eaten fresh. Wrapped in a damp cloth, the artichokes will keep for up to five days in the refrigerator. Before freezing, remove the hard leaves and the choke, then blanch for 4 to 8 minutes.
- A dry stem does not mean that the quality of the artichoke head is bad. French artichokes always have a dry stem and are not comparable to Italian artichokes. In addition, the stem is not eaten.
- A few brown spots on the outer leaves are not a problem. The outer leaves are removed before cooking and are not eaten.
